However the list below should give you a pretty good idea of the variety and creativity that the Vietnamese have used in creating these different dishes. Chicken rice in Hội An
Hoi An, chicken rice is so savory and ubiquitous that everyone coming here should give it a try. Hoi An people are proud of this dish and recognize it as one of their specialties. Chicken rice is simply rice cooked with chicken bouillon and a dash of turmeric – which is the reason why the rice in this dish is not white as usual but light yellow. The Chicken in this dish is torn into small pieces and then mashed with crushed onions, coriander and the other spices. It’s a delicious and savory meal that will go down easy and can be found almost anywhere that street food is sold in Ha Noi and Saigon.
Clam rice in Huế
Com Hen is a unique cuisine from Hue. Com Hen contains rice, boiled mussel, star fruit, fish sauce, onion, pepper, peanut, chili, and a variety of herbs. All the ingredients come to the table, raw in a bowl, and then when people eat Com Hen, they slowly add boiled mussel broth with chili sauce into the bowl. A delicious bowl of Com hen cannot be eaten without chili’s as this is what makes the dish so delicious. So be warned, it’s a bit spicy.
Broken rice in Ho Chi Minh
Like “Phở” in the North, broken rice is considered one of the most traditional foods in Southern Vietnam, people eat it any time for any meal: in the morning, afternoon or even at night and is found every where: from a pavement food shop to a luxury restaurant. The broken rice is usually served with grilled pork and a sweet fish sauce.
Green crab rice in Phú Quốc
The name says it all, the main ingredients of this dish are cooked rice, green crab meat, sliced onion, garlic, cooking oil and tomato sauce. The green crab meat is sautéed with garlic and onions till brown, then added to cooked rice, various spices and tomato sauce. Green crab rice is not only good looking but also a highly nutritious dish you should try next time you visit Phu Quoc Island.
Bamboo rice is made from sticky rice and some other ingredients, the ingredients are all stuffed into bamboo tubes then fried over a fire till done. Bamboo rice is a specialty of the minority people in the mountainous provinces of Vietnam. Once tasting it, eaters will immediately feel the breath of nature.
